Ingredients:

• 1 cup – thick Cream
• 1/2 cup – Butter
• 250 g – goat cheese, cut into pieces
• salt and freshly ground pepper to taste
• 1/2 cup – toasted walnuts, coarsely chopped
• 350-400 g – Pasta of your choice, boiled and drained
• Chopped chives, Parsley or Coriander leaves

Method:

  1. Pour the cream into a pan and bring it to a boil.
  2. Boil on low heat for several minutes, until the cream thickens and reduces to half its quantity.
  3. Add butter, letting it melt slowly into the cream, keep stirring.
  4. Keep warm over low heat.
  5. Add the cheese to the cream, stirring until the cheese is partially melted.
  6. Season with salt and pepper to taste, toss in the walnuts just before mixing the sauce with the pasta.
  7. Garnish with chives, parsley or coriander leaves.
