
Ingredients:
• 1 cup – thick Cream
• 1/2 cup – Butter
• 250 g – goat cheese, cut into pieces
• salt and freshly ground pepper to taste
• 1/2 cup – toasted walnuts, coarsely chopped
• 350-400 g – Pasta of your choice, boiled and drained
• Chopped chives, Parsley or Coriander leaves
Method:
- Pour the cream into a pan and bring it to a boil.
- Boil on low heat for several minutes, until the cream thickens and reduces to half its quantity.
- Add butter, letting it melt slowly into the cream, keep stirring.
- Keep warm over low heat.
- Add the cheese to the cream, stirring until the cheese is partially melted.
- Season with salt and pepper to taste, toss in the walnuts just before mixing the sauce with the pasta.
- Garnish with chives, parsley or coriander leaves.
