Ingredients:

• 1 cup – flour
• 1 cup – castor Sugar
• 185 g – Butter (melted)
• 2 – Egg
• 2 tsp – baking powder
• 1 tsp – vanilla essence
• 1 tbsp – hot water
• To decorate:
• desiccated Coconut
• glaced Cherries (halved) jam

Method:

  1. Combine eggs and sugar.
  2. Beat until thick.
  3. Sift flour and baking powder.
  4. Add flour, melted butter, vanilla essence and water to the egg mixture.
  5. Spoon a little into each well-greased mould.
  6. Bake at 190 degree C for 12-15 minutes or until well golden browned.
  7. Remove and cool on wire rack.
  8. Brush each madeleine with jam.
  9. Coat well with desiccated coconut and top with glace cherries.
