
Ingredients:
• 1 cup – flour
• 1 cup – castor Sugar
• 185 g – Butter (melted)
• 2 – Egg
• 2 tsp – baking powder
• 1 tsp – vanilla essence
• 1 tbsp – hot water
• To decorate:
• desiccated Coconut
• glaced Cherries (halved) jam
Method:
- Combine eggs and sugar.
- Beat until thick.
- Sift flour and baking powder.
- Add flour, melted butter, vanilla essence and water to the egg mixture.
- Spoon a little into each well-greased mould.
- Bake at 190 degree C for 12-15 minutes or until well golden browned.
- Remove and cool on wire rack.
- Brush each madeleine with jam.
- Coat well with desiccated coconut and top with glace cherries.
