
Ingredients:
• 1 tbsp – fresh Lemon juice
• 2 tbsp – light Cream cheese (with roasted garlic)
• 2 tsp – chopped fresh Mint leaves
• 2 tbsp Olive oil
• 1 – Cucumber peeled and diced
• 1 – large ripe Tomato, coarsely chopped
• 1/2 cup – chopped onion, 2 cups – shredded Cabbage
• 1/3 cup crumbled ricotta cheese
• salt
• 1/4 tsp – fresh ground pepper
• 2 large size wraps (warmed)
Method:
- In a large bowl combine lemon juice, parmesan cheese, mint and mix well.
- Add olive oil, diced cucumber, onion, tomato, cabbage and ricotta cheese and mix well
- Season with pepper and salt.
- Spoon half of the salad mixture onto the lower third of the wrap. (Make sure the filling does not reach the edge of the wrap. )
- Fold in both sides of the wrap and roll up the wrap.
- Toast the wrap on a grill for 1 minute
- Cut in half and serve immediately.
