Ingredients:

• 4 eggs – Hard boiled and shelled (make lengthwise slits on all)
• 3 medium sized Onions (chopped finely)
• 1/2 can – Thick Coconut Milk
• 3-4 – Cloves
• 1/2 stick -Cinnamon
• Grind:
• 5 – 6 Green chillies
• 1 inch Ginger
• 4 -5 fresh Garlic Cloves or 2 tsp minced Garlic
• 1 bunch Coriander leaves
• 1-2 medium sized Shallots
• 1 Cardamom
• 2 tsp aniseed
• Grind into a fine paste. Set aside

Method:

  1. Heat oil in a pan. Add the cloves and cinnamon and let them pop.
  2. Add onions and fry them on medium heat till light pink in colour.
  3. Add the ground paste and cook till the oil separates.
  4. Add salt to taste and add the eggs into this gravy.
  5. Stir for 2 minutes very lightly and then add coconut milk on top.
  6. Let it simmer for few minutes on low – medium flame.
  7. Serve hot with rotis / steamed rice / appams / dosas.
