
Ingredients:
• 4 cup – cooked Rice
• 1 cup – coriander leaves, chopped
• ½ cup – onion, chopped
• 1/3 cup – green mango, peeled and chopped finely
• 2 green chilies, slit
• 1 red chili, broken into 2 pieces
• 3 tbsp – oil
• 1 tsp – mustard
• 1 tsp – cumin seeds, crushed
• ½ tsp – black pepper corns, crushed
• salt to taste
Method:
- Heat the oil in a kadai. Add mustard. When it splutters, add cumin, pepper and red chili.
- After few seconds, add green chili and onion. Fry till onion is light brown.
- Add mango and fry till it turns slightly soft. Add coriander leaves.
- Add rice and salt. Mix well. Cover and keep on low flame for 2-3 minutes.
- Serve hot with potato wafers or papad.
