Ingredients:

• 4 cup – cooked Rice
• 1 cup – coriander leaves, chopped
• ½ cup – onion, chopped
• 1/3 cup – green mango, peeled and chopped finely
• 2 green chilies, slit
• 1 red chili, broken into 2 pieces
• 3 tbsp – oil
• 1 tsp – mustard
• 1 tsp – cumin seeds, crushed
• ½ tsp – black pepper corns, crushed
• salt to taste

Method:

  1. Heat the oil in a kadai. Add mustard. When it splutters, add cumin, pepper and red chili.
  2. After few seconds, add green chili and onion. Fry till onion is light brown.
  3. Add mango and fry till it turns slightly soft. Add coriander leaves.
  4. Add rice and salt. Mix well. Cover and keep on low flame for 2-3 minutes.
  5. Serve hot with potato wafers or papad.
