Ingredients:

• ½ kg – grated sour green Mango
• ½ kg – Sugar
• ¼ cup – onion, finely chopped
• 3 to 4 pieces – Cinnamon
• 1.5 tsp – ginger, minced
• 1.5 tsp – garlic, minced
• 75 ml – Vinegar
• 5 tsp – salt
• 2 tsp – chili powder
• 1 tsp – Cardamom pods

Method:

  1. Add a little water to mango and cook till soft.
  2. Add sugar and salt and keep aside till the sugar is dissolved.
  3. Tie all the ingredients from cardamom to onion in a piece of muslin and add to mango.
  4. Add chili powder and cook till the mixture is quite thick.
  5. Remove the spice bag and squeeze in all the juice.
  6. Add vinegar and cook till the relish has the consistency of jam.
  7. Pour in sterilized bottles, cool and seal.
  8. Lasts for a couple of months and longer in the refrigerator.
