Ingredients:

• 6 – Bitter gourds
• 5 – Red Chillies
• 1 tsp – Tamarind extract
• 1/2 cup – jaggery.
• Ginger – a little.
• Asafoetida – a pinch
• 2 tbsp – vegetable oil
• 1 tsp – mustard.
• For the powder:
• 1 tbsp – Coriander seeds
• 2 tbsp – Peanuts
• 1/2 cup – grated Coconut
• 1 tsp – Cumin seeds

Method:

  1. Roast the ingredients to be ground in a pan in medium flame and powder it and keep aside.
  2. Take oil in a pan, splutter mustard, add cut bitter gourd and fry till it becomes light golden brown.
  3. Then add the red chillies, asafoetida, ginger and mix well with the powder.
  4. Now add the tamarind water, boil till the gravy thickens.
  5. Add jaggery and boil for another two minutes and remove from heat.
