Ingredients:

• 1 – bunch of iceberg Lettuce
• 10 leaves – Romaine Lettuce
• 1 – Cucumber
• 1 – Tomato
• 1 packet – low fat halloumi cheese
• 1 tbsp – Walnuts
• 1 tbsp – Lime juice
• 1 tbsp – Olive oil
• 1 tsp – crushed black pepper
• 1/4 tsp – Red Chilli powder
• 1/4 tsp – Italian herbs

Method:

  1. Wash all the vegetables thoroughly.
  2. Chop tomatoes and cucumber into medium-sized pieces. Place in a glass bowl.
  3. Tear lettuce leaves into pieces with hands and add to the bowl.
  4. Add walnuts.
  5. Cut halloumi cheese into small pieces.
  6. Heat oil in a pan.
  7. Add red chilli powder and herbs, add haloumi immediately.
  8. Saute for 3-4 mins and add this to the bowl. Add lemon juice.
  9. Mix everything well with a wooden spoon.
  10. Do not add salt as halloumi cheese is quite salty.
