
Ingredients:
• Eggplant – 6
• Onion – 2, chopped
• Cheese – 4 tsp, grated
• Minced Meat – 250 g (chicken or pork)
• Bead crumbs – 3 tsp
• Salt to taste
• Water as required
• Cornstarch – 1 tsp
• Butter – 1 tsp
• Oil – 4 tbsp
Method:
- Remove the stem of the eggplant. Cut it lengthwise into half. Cut the half, lengthwise, but not all the way through. Soak in salt water.
- Heat butter in a pan and saute onion.
- Add meat, bread crumbs, salt and water.
- In medium heat, cover the pan for one minute.
- Put cheese and mix well. Keep aside for cooling.
- Divide into six parts.
- Wipe off water from the eggplant.
- Sprinkle cornstarch on the cut surface.
- Place a layer of meat mixture between the eggplant halves. Again, sprinkle cornstarch around the meat.
- Heat oil for deep Frying.
- On medium heat, fry eggplant until the meat is done.
- Garnish with grated ginger and soy sauce/ ketchup and serve.
