
Ingredients:
• plain flour (maida) – 2 cup
• baking powder – 1/2 tsp
• sodium bicarbonate – ½ tsp
• chili flakes – ½ tsp
• dried Thyme – 1/2 tsp
• dried Oregano – 1/2 tsp
• vegetable oil – 2 tbsp
• curds – 1/2 cup
• Milk – 1/2 cup
• Sugar – 1 tsp
• compressed Yeast – 1 tsp
• salt – 1/2 tsp
• warm water as needed
Method:
- Mix together all the ingredients from flour to oregano.
- Rub in the oil.
- In a small pan, combine curd and milk and heat very gently till slightly warm (It does not matter if the mixture curdles).
- Dissolve sugar in it and mix in the yeast.
- Add this liquid to the flour mixture.
- Add enough warm water and knead well into smooth, soft dough.
- Keep covered till the dough rises to double its volume.
- Knead the dough lightly again and divide into 8 balls.
- Roll out each ball into a disc, 1.5 cm thick.
- Cook on a hot griddle on both sides (Do not add any fat while cooking).
- Serve hot with curry and /or dal and raitha.
