Ingredients:

• plain flour (maida) – 2 cup
• baking powder – 1/2 tsp
• sodium bicarbonate – ½ tsp
• chili flakes – ½ tsp
• dried Thyme – 1/2 tsp
• dried Oregano – 1/2 tsp
• vegetable oil – 2 tbsp
• curds – 1/2 cup
• Milk – 1/2 cup
• Sugar – 1 tsp
• compressed Yeast – 1 tsp
• salt – 1/2 tsp
• warm water as needed

Method:

  1. Mix together all the ingredients from flour to oregano.
  2. Rub in the oil.
  3. In a small pan, combine curd and milk and heat very gently till slightly warm (It does not matter if the mixture curdles).
  4. Dissolve sugar in it and mix in the yeast.
  5. Add this liquid to the flour mixture.
  6. Add enough warm water and knead well into smooth, soft dough.
  7. Keep covered till the dough rises to double its volume.
  8. Knead the dough lightly again and divide into 8 balls.
  9. Roll out each ball into a disc, 1.5 cm thick.
  10. Cook on a hot griddle on both sides (Do not add any fat while cooking).
  11. Serve hot with curry and /or dal and raitha.
