
Ingredients:
• Chicken mince – 250 gm
• Rice vermicelli – 150 gm
• Coconut Milk – 400 ml
• Peanut oil – 3 tbsp
• Garlic – 1 tsp, minced
• Shallots – ½ cup, minced
• Curry leaves – few
• Lemon rind – 1 tsp, grated
• light soya sauce – 2 tbsp
• Lemon juice – 1.5 tbsp
• Coriander leaves – 2 tbsp, chopped
• Spring onion – 2 tbsp, chopped
• Bean sprouts – 2 tbsp
• Cucumber cut into juliennes – 4 tbsp
Method:
- Heat oil and fry garlic till dark brown.
- Add shallots and fry till golden brown.
- Add curry leaves, lemon rind and coconut milk.
- Add chicken mince and simmer till chicken is cooked.
- Add vermicelli and simmer till it is cooked.
- Add Soya sauce, lime juice, coriander and spring onions.
- Mix well and remove from fire.
- Serve hot garnished with bean sprouts and cucumber strips
