Ingredients:

• Chicken mince – 250 gm
• Rice vermicelli – 150 gm
• Coconut Milk – 400 ml
• Peanut oil – 3 tbsp
• Garlic – 1 tsp, minced
• Shallots – ½ cup, minced
• Curry leaves – few
• Lemon rind – 1 tsp, grated
• light soya sauce – 2 tbsp
• Lemon juice – 1.5 tbsp
• Coriander leaves – 2 tbsp, chopped
• Spring onion – 2 tbsp, chopped
• Bean sprouts – 2 tbsp
• Cucumber cut into juliennes – 4 tbsp

Method:

  1. Heat oil and fry garlic till dark brown.
  2. Add shallots and fry till golden brown.
  3. Add curry leaves, lemon rind and coconut milk.
  4. Add chicken mince and simmer till chicken is cooked.
  5. Add vermicelli and simmer till it is cooked.
  6. Add Soya sauce, lime juice, coriander and spring onions.
  7. Mix well and remove from fire.
  8. Serve hot garnished with bean sprouts and cucumber strips
