Ingredients:
• 1- mango, big and cubed
• 1/2 cup – Jaggery
• 1 tsp – Red Chilli powder
• 1 tsp – Mustard Seeds+1/4tsp – Mustard Seeds for tempering
• 1/2 tsp – Fenugreek seeds
• 10 – shallots, chopped
• Oil
• Salt to taste
Method:
- Dry roast the mustard seeds and fenugreek seeds for few seconds, grind to a fine powder and keep aside
- Heat enough oil, splutter the mustard seeds.
- Then add the chopped shallots and saute until they turn translucent.
- Add the cubed mango bits, red chilli powder and salt, cook for few minutes.
- Add enough water, jaggery and cook until the mangoes get well cooked.
- Finally add the spice powder, give a stir and turn off the stove
- Once the pickle gets cooled, conserve them in air tight box
