Ingredients:

• 1- mango, big and cubed
• 1/2 cup – Jaggery
• 1 tsp – Red Chilli powder
• 1 tsp – Mustard Seeds+1/4tsp – Mustard Seeds for tempering
• 1/2 tsp – Fenugreek seeds
• 10 – shallots, chopped
• Oil
• Salt to taste

Method:

  1. Dry roast the mustard seeds and fenugreek seeds for few seconds, grind to a fine powder and keep aside
  2. Heat enough oil, splutter the mustard seeds.
  3. Then add the chopped shallots and saute until they turn translucent.
  4. Add the cubed mango bits, red chilli powder and salt, cook for few minutes.
  5. Add enough water, jaggery and cook until the mangoes get well cooked.
  6. Finally add the spice powder, give a stir and turn off the stove
  7. Once the pickle gets cooled, conserve them in air tight box
