Ingredients:

• 5 pieces – ripe Jackfruit (arils), deseeded
• 4 – eggs
• 2.5 cups – flour
• 1.75 cups – Sugar
• 220 g – Butter
• 1.5 tsp – baking powder
• 1 tsp – Lime juice
• 1 pinch – salt

Method:

  1. Sieve flour and baking powder together.
  2. Separate egg yolks and white, beat the egg whites till stiff.
  3. In a mixing bowl, mix together butter and sugar.
  4. Add egg yolks, salt and lime juice.
  5. To the above mixture add alternately flour and egg whites and mix using an electric hand mixer.
  6. Chop jackfruit into fine pieces and add to the above batter. Mix well.
  7. Meanwhile, preheat oven to 180 degrees.
  8. Pour the batter into a large greased pan and bake for 50 mins.
