Ingredients:
• 250 g – jackfruit, cut in cubes
• 1.5 cup – onion, chopped
• 2 cup – tomato, chopped
• 2 tsp – green chilli, chopped
• 1 tsp – Turmeric powder
• 2 tsp – coriander powder
• 1 tsp – Red Chilli powder
• Salt to taste
• 1 tsp – Garam Masala
• A hand full – chopped coriander
• 2 tbsp – vegetable oil
• Vegetable oil for frying
Method:
- Fry jackfruit cubes till golden colour and drain on paper towel and keep it aside.
- Heat 2 tbsp oil in a pan, add onions and saute for 1 minute.
- Add all spices and salt except garam masala.
- Now add chopped tomatoes and chillies, stir and add fried jackfruit cubes to it.
- Cover and let it cook for 10 minutes.
- Open the lid and cook for another 5 minutes till oil separates.
- Remove from heat and garnish with chopped coriander leaves and garam masala.
- Serve hot.
