Ingredients:

• 4 – medium sized Bitter gourds
• Salt to taste
• 1/3 cup – grated Coconut
• Oil

Method:

  1. Slice bitter gourd, sprinkle salt and rest for 30 mins.
  2. Then drain, rinse and dry with paper towel.
  3. Bring water to a boil, add sliced bitter gourd and cook till done.
  4. Heat oil in a pan and add the bitter gourds. Stir-fry for 3 mins.
  5. Sprinkle grated coconut, salt and saute for a minute.
  6. Serve hot.
