Ingredients:
• 1 cup – Basmati Rice
• 1 cup – Onion (chopped)
• 1 cup – Pineapple pieces
• handful – Peas
• Salt
• 1 tbsp – Oil
• 2 tbsp – Ghee
• To fry in a drop of oil or Ghee and grind:
• 4 – Cloves
• 1 tsp – Jeera
• 1 tsp – Channa dal
• 1 tsp – Coriander seeds (dhaniya)
• 3 – Red Chillies
• To fry in 1/2 tsp of oil:
• 2 tsp – Chopped Almonds
• 1 tsp – Cashews
• 2 tbsp – Raisins
• 1 – Star anise
• 1 – Cinnamon
Method:
- Soak basmati rice in water for 1/2 hour and cook till done and set it aside.
- In a drop of oil, saute cloves, jeera, channa dal, coriander seeds and red chillies for few mins and grind them to a fine powder.
- Separately, heat oil in a pan and saute almonds, cashews, raisins, star anise and cinnamon for few mins and set it aside.
- In the remaining oil or ghee, saute chopped onions till golden brown.
- Add frozen peas and salt and cook for another 2 minutes.
- Mix everything together (onions-peas mixture, ground powder, fried nuts and raisins) with rice and some salt.
- Finally add pineapple pieces and serve it hot.
