Ingredients:

• 3 cups Rice
• 750 g – jack-fruit pieces
• 1 cup – yogurt
• 1 cup – sliced Onion
• 1 cup – sliced Tomatoes
• 1 tsp – chopped Green chilli
• 1 cup – chopped Mint
• 1 tbsp – Ginger (sticks)
• 1/2 cup – chopped coriander
• 1 tsp – Red Chilli powder
• 1 tsp – coriander powder
• 2 tsp – Garam Masala powder
• 1 tbsp – Turmeric powder
• 1 tsp – Cumin seeds
• salt to taste
• oil for frying
• 2 tbsp – Butter or Ghee
• 1/2 tbsp – Saffron dipped in Milk

Method:

  1. Wash rice and boil with water and garam masala and keep it aside.
  2. Boil jack-fruit with pinch of salt, and turmeric powder in water and sieve in colander.
  3. After that fry the jack-fruit in oil.
  4. Now in a large pan heat 2 tbsp oil and add onions, green chilly, ginger and turmeric powder.
  5. Saute for 5 minutes and add coriander powder, cumin seeds and tomatoes.
  6. To this add 1/2 cup water, jack fruit pieces, red chilli powder, yoghurt, salt and saute.
  7. Add coriander and mint (chopped) and garam masala powder.
  8. Now grease a serving bowl with ghee or butter and add jack-fruit mix, on top add a layer of rice, sprinkle mint and saffron milk, then one more layer of jack-fruit mix and again a layer of rice, and ginger and saffron serve hot.
