Ingredients:

• 1 cup – raw Rice (basmati)
• 1 cup – Sugar
• 1/4 cup – Ghee
• 10-12 – Cashew nuts (broken)
• 1 tsp – Raisins
• 1 inch – Cinnamon stick (Broken)
• 1/2 tsp – Nutmeg powder
• 1 tsp – Cardamom powder
• 1 tbsp – strands of Saffron
• 1/2 tsp – edible yellow food colour (optional)

Method:

  1. Wash rice and cook it till just done. It should not be well cooked.
  2. Add 1/4 cup water to sugar and heat till one string syrup is formed.
  3. Add the rice, cardamom powder, saffron strands and yellow colour.
  4. Mix well.
  5. Simultaneously in another kadai, heat ghee and add cloves, cinnamon sticks and cashew bits.
  6. When cashew bits turn light brown, add raisins and nutmeg powder.
  7. Pour immediately over the rice and mix well.
  8. Turn over constantly till the ghee separates.
  9. Remove from flame.
  10. Serve hot.
