Ingredients:

• 2 large potatoes, boiled and mashed
• 1 cup – green peas, boiled and roughly mashed
• 1 cup – cauliflower, finely chopped
• 1 large capsicum, deseeded and chopped
• 1 large onion, chopped
• 2 green chillies, deseeded and chopped
• 1 cup – spring onions, chopped along with the stems and leaves
• 2 large tomatoes, chopped
• 2 tbsp – Lemon juice (or to taste)
• 6 Cloves Garlic
• 2 tsp – Garam Masala powder
• 1 tsp – coriander powder
• 1 tsp – cumin powder
• 1/2 tsp – asafetida (optional)
• 150 to 200 gms – Butter
• 1/2 cup – coriander leaves, chopped
• 4 paav (buns)
• Salt to taste

Method:

  1. Blend the garlic cloves in a blender with half cup of water.
  2. Heat 50 gms of butter in a wok and saute the onions, asafoetida and green chillies, for 2 mins.
  3. Add the cauliflower and saute for another 2 mins.
  4. Now add potatoes, green peas and tomatoes and 1 cup water.
  5. Cook on medium heat for 3-4 mins.
  6. In a separate pan, heat 50 gms of butter.
  7. Add the chopped capsicum and spring onions and saute for 30 seconds.
  8. Add the spices and salt, saute for another 15 seconds.
  9. Add the blended garlic and cook for another 30 seconds.
  10. Add the potatoes mixture and mix well.
  11. Add lemon juice.
  12. Add 30 gms of butter and coriander leaves just before serving.
  13. Cut the paav horizontally and smear one side of the paav with butter.
  14. Heat a griddle and saute the paav on both sides for 30 seconds. Serve with the vegetables.
