Ingredients:

• 6 kiwis – chopped
• 1 cup – Rice
• 3 cups – water
• 6 cups – Milk
• 12 Cardamom pods – shelled
• 1/2 tsp – ground Cinnamon
• 2/3 cup – castor Sugar
• 1/4 cup – toasted, flaked Almonds
• 2/3 cup – Cream

Method:

  1. Wash the rice very well until the water runs clear.
  2. Boil 3 cups of water.
  3. Add the rice and cook uncovered for 5 mins. Drain.
  4. Combine milk, sugar and cinnamon in a large pan and boil.
  5. Add the rice and stir well.
  6. Simmer uncovered for about 30 mins or until the milk is reduced.
  7. Remove from heat, add the kiwi, cardamom seeds and half of the almonds.
  8. Before serving, add cream and garnish with almond flakes.
