Ingredients:

• 4 tbsp – oil
• 1/2 tsp – Cumin seeds
• 1 tsp – finely chopped Ginger
• 5 – green chillies, finally chopped
• 1/2 tsp – Turmeric powder
• 1 cup – shallots, chopped
• 2 ripe – tomatoes, chopped
• 2 – cucumbers, grated
• 1 cup – cooked Rice
• Coriander leaves for garnish
• Salt to taste

Method:

  1. Heat oil and splutter cumin seeds.
  2. Add ginger, green chillies, salt, turmeric powder, and shallots.
  3. Saute on low flame till onions turn translucent.
  4. Add tomatoes and cook for another minute.
  5. Stir in cucumber and cook on high heat for a minute.
  6. Stir in cooked rice. Cook for 2 minutes on high heat and transfer to a serving dish.
  7. Garnish with coriander leaves and serve.
