
Ingredients:
• 2 cups – flour
• 4 eggs
• 1 cup – powdered Sugar
• 1 cup – Milk
• 2 tbsp – Butter
• 2 tbsp – custard powder
• 3 tsp – Lemon juice
• 2 tsp – baking powder
• 1/2 rind – a Lemon
Method:
- Sift flour and baking powder. Cut lemon rind into thin strips. Whip eggs.
- Add sugar and butter to the eggs and beat until creamy.
- To a cup of water, add custard powder and cook over slow fire.
- Stir continuously until smooth and thick. Add milk.
- Combine the custard mixture with the sieved ingredients.
- Fold in whipped egg-butter mixture.
- Add lemon juice and mix gently. Sprinkle lemon strips.
- Pour into a well-greased baking dish and bake at 180 degrees until done.
