Ingredients:

• 175 g -caster Sugar
• 175 g- unsalted Butter
• 250 g -self raising flour
• 3 -medium eggs
• 1- lemon, finely grated zest

Method:

  1. Preheat oven at 180 C. Grease cake tin.
  2. Cream sugar and butter well.
  3. Add eggs one by one and cream well.
  4. Add flour cautiously.
  5. Mix well and carefully.
  6. Pour into cake tin and bake for 25 minutes.
  7. Cool before serving.
