Ingredients:

• 3 eggs
• 6 tbsp. Sugar
• 1 tsp. powdered gelatin
• 4 tbsp. Lemon juice
• 1 tsp. grated Lemon rind

Method:

  1. Separate the eggs and place the yolks in one bowl, the whites in another.
  2. Beat yolks with the sugar until very pale yellow and fluffy.
  3. Dissolve the gelatin in 1 tbsp. of hot water and mix with the lemon juice.
  4. Add to the creamed yolks with the lemon rind and mix well.
  5. Beat whites until very stiff and fold gently into the yolk mixture. Spoon the mousse into a glass bowl and refrigerate for at least 8 hours.
  6. Once the mouse is set, decorate with slices of seasonal fruits.
