Ingredients:
• 2 cups – lima beans(soaked overnight)
• 1/2 cup – Coconut milk, approx.
• 1 – big onion, chopped
• 1 /2 tbsp – Ginger Garlic paste
• 15 – chopped or canned chopped Tomato
• Maharashtrian kala masala
• mustard seeds, Methi seeds for tadka
• 1 tbsp- haldi, dhania, Jeera powder, Red Chilli powder, Jaggery (optional)
• salt
• oil
Method:
- Soak lima beans in enough water overnight.
- Put about 2 tbsp oil in kadai. Add mustard seeds, methi seeds.
- Let them splutter, then add half of the chopped onion and fry till soft.
- Add remaining onion and fry until golden brown, add ginger garlic paste and fry.
- Add haldi, dhania, jeera powder, kala masala or garam masala, red chilli powder fry for few seconds.
- Add lima beans, coconut milk.
- If necessary add some water .
- Add chopped tomatoes and salt. Cover and cook.
- Check the consistency and add water if it is too dry.
- Consistency should be of gravy so add a little water if beans are not cooked yet.
- Beans should be soft but not mashed.
- Add jaggery if required. Enjoy with phulkas and rice.
