
Ingredients:
• 100 g – Marie biscuits
• 1/2 cup – Cream cheese
• 1/2 cup – powdered Sugar
• 1/2 cup – fresh Cream
• 1/3 cup – Butter
• 2 eggs, large, separated
• 1 tbsp – gelatin
• 2 tsp – grated Lime rind
• 2 tbsp – Lime juice
• For chocolate sauce:
• 1.5 cup – water
• 1/2 cup – Sugar
• 2 tbsp – Corn flour
• 2 tbsp – Butter
• 1 tbsp – cocoa
• 1 tsp – vanilla essence
Method:
- Melt butter. Crush the biscuits.
- Mix both together and press into a greased pie dish.
- Bake at 200 degrees centigrade for 10-12 minutes.
- Cool and keep in the freezer.
- Soak the gelatin in 1/2 cup of water.
- Separate the eggs.
- Add lime rind and 1/2 cup sugar to yolks and beat till thick. Add the milk.
- Cook and stir on very low heat till the mixture thickens (Do not boil).
- Dissolve gelatin over a low flame and add to the custard. Cool completely.
- Mix cream cheese with lime juice and add to the custard. Add lightly beaten cream.
- Beat the egg whites stiffly.
- Add remaining sugar little at a time, beating well after each addition.
- Fold gently into the cheese mixture.
- Pour into the pie dish and leave to set in the refrigerator (Not freezer). Decorate with grated chocolate and serve with chocolate sauce.
- For chocolate sauce:
- Mix all the ingredients together except butter.
- Place on fire, cook and stir till it begins to boil.
- Lower the flame and simmer for 2-3 minutes. Remove from fire, add butter.
- Cool and chill in refrigerator.
