Ingredients:
• 1 – big onion, chopped finely
• 1/2 cup – fine rava,
• 1/2 cup – Rice flour
• 1/2 cup – Maida
• 10 – curry leaves, chopped
• 4 – green chillies, chopped finely
• 1/2 tsp – asafetida
• 1/2 tsp – baking soda
• Oil for Deep Frying
• Warm water to knead the dough
• Salt to taste.
Method:
- In a bowl add the flours, soda, green chillies, asafoetida, curry leaves, salt and mix thoroughly.
- Take a flat bottom pan, heat about 4 tsp. of oil and then add the chopped onions. Saute until it becomes soft and transparent. Let it cool.
- Add the onions to the bowl of flour
- Now add warm water little by little and make a thick dough. Knead well for about 2-3 minutes and cover this with a damp cloth. Keep it aside for 30 minutes.
- Divide the dough into lemon sized portions and make vadas with wet hands.
- Deep Fried in hot oil and maintain the temperature at medium heat to get the vadas uniformly cooked.
- Transfer vadas to a colander lined with kitchen towel to absorb excess oil. Serve hot.
