
Ingredients:
• 170 g – flour
• 120 g – Sugar
• 120 g – Butter or margarine
• 1/2 tsp – baking soda
• 3 – eggs
• 1 tsp – Lime juice
• 1 tsp – Lemon rind
• 1/2 tsp – Lemon essence
• few drops – vanilla essence
• 15 g – candied Orange peel
• Milk to mix
• 1 pinch – salt
Method:
- Sieve the flour with the baking powder.
- Cream the butter and sugar till light and fluffy.
- In a steel vessel beat the eggs with vanilla essence.
- Add to the sugar and butter mixture little by little while mixing gently.
- Take care that the mixture does not curdle.
- Fold in the flour lightly.
- Add lemon juice, lemon rind and lemon essence.
- Add enough milk to the mixture till dropping consistency.
- Pour the mixture in a greased baking tin.
- Bake in an oven at 375 degrees Fahrenheit/150 degrees centigrade for about 45 minutes.
- Decorate with strips of candied orange peel.
