Ingredients:

• 1 cups – Ash Pumpkin / Tomato / Yam
• 1 cup Colacasia
• 1 – Banana
• 250 g – Mangalore Cucumber / Mango
• Coconut powder-2 cups
• Green chilies-10 to 15
• Sour Curds – 2 to 3 cups
• Turmeric powder – 1/4 tsp.
• Salt – to your taste
• Mustard seeds- a pinch
• Fenugreek (Vendayam / Methi) seeds – A pinch
• Red Chillies- 1 or 2
• Curry leaves (Karipatha) – A few

Method:

  1. First cut the vegetable (whichever one you choose), in whatever shape you want it.
  2. Wash it thoroughly (anything other than tomatoes) and put it in a vessel.
  3. Add turmeric powder, salt and water (just enough to immerse the vegetable).
  4. Grind the coconut powder with green chillies and sour curds.
  5. When the vegetables are cooked, add the coconut-curds mix.
  6. Let it boil very lightly (it should not over boil).
  7. Keep aside.
  8. Saute the mustard seeds, fenugreek seeds, red chillies and curry leaves together.
  9. Use this sauteed mixture for garnishing the more-kootaan.
  10. Serve hot / cold with steamed rice.
  11. Also goes well with chapattis.
