Ingredients:
• Vegetables
• 1 cup – snakegourd
• 1/2 cup – Ridge gourd
• 1/4 cup – Bitter gourd
• 1/2 cup – Cucumber
• 4 Carrots
• 3 Drumsticks
• 1/2 cup – long beans
• 1/4 cup – Raw Mango
• For grinding:
• 1 – Coconut
• 1/2 tsp – cumin
• 1 Clove Garlic
• 3 Green chillies
• 1 string Curry leaves
• 1/2 cup – Curd
• 1 tsp – Turmeric powder
• Salt as required
• 1/2 tsp – oil
Method:
- Cut all the vegetables and keep aside.
- Place them in a pressure cooker along with salt, turmeric powder, water and cook up to 3 whistles.
- In the meantime, grind the ingredients coconut,cumin, garlic, green chillies to a coarse paste.
- Mix this paste with cooked vegetables and allow to boil.
- Once it starts boiling, add curry leaves & curd.
- Switch off the flame and add 1/2 tsp oil on top of the curry.
- Malabar style avial is ready.
