Ingredients:

• 1/2 kg – tender Chicken
• 1/2 cup – Tomato puree
• 1/2 cup – thick yogurt
• 1.5 tsp – ginger-garlic paste
• 1/4 cup – fried Onions
• 1 – green chilli, slit
• 10- fresh Mint leaves, very finely chopped
• 2 tbsp – Coriander leaves chopped
• 1 tsp – Red Chilli powder
• 1/8 tsp – Turmeric powder
• 1.5 tsp – Chicken masala powder or biryani masala powder
• 1/2 tsp – kasuri Methi
• 1/4 cup – Cream
• Oil as needed
• Dry spices: 1 – Bay Leaf
• 3 – green Cardamoms
• 1/8 tsp poppy seeds1 inch – Cinnamon stick
• 4 – Cloves
• 1 strand – Mace
• A few – pepper Corn
• salt to taste.

Method:

  1. Heat 1 tbsp oil in a pan, add dry spices and saute, add half the quantity ginger garlic paste and saute
  2. Add chicken and fry on high for 3 to 4 mins. Set this aside to cool
  3. Add 1 tsp oil to the same pan, add pureed tomatoes and fry till almost dry.
  4. Once cool, combine fried chicken, tomato puree, yogurt, fried onions, mint, coriander leaves, ginger garlic paste, turmeric, green chilli, red chilli powder, salt and half of chicken masala powder.
  5. Marinate the chicken, set aside for at least 1 hour.
  6. To prepare the gravy, heat butter or oil, add marinated chicken and cook on a very low flame, stirring occasionally.
  7. Cook covered till the chicken turns tender. If needed add very little water while cooking.
  8. Once the chicken is almost done, add the rest of the chicken masala powder, kasuri methi and cream. Cover and cook for 3 to 4 mins.
  9. Garnish with coriander leaves
  10. Serve hot.
