Ingredients:

• 2 cups – spinach, finely shredded
• 1.5 cup – onions, sliced
• 2 – green chillies, chopped
• 4 tsp – coriander powder
• 1 tsp – Red Chilli powder
• 1 cup – coconut, grated freshly
• 1 tsp – Lemon juice
• 1 sprig – Curry leaves
• Salt to taste

Method:

  1. Mix all the ingredients in a bowl expect lemon juice. Heat a non-stick pan, add all the ingredients and saute till spinach is soft and cooked. Add the lemon juice and salt and mix well.
  2. Remove from heat and serve with rice or chapatti.
