Ingredients:

• 1 large – Mango
• 50 ml (2 fl oz) – Apple Vinegar with Honey
• 115 g (4 oz) – Demerara Sugar
• 225 ml (8 fl oz) – water
• 1/2 tsp – shelled Cardamom seeds
• 1/2 tsp – ground Ginger
• 1/2 tsp – ground Cloves
• 150 g (5 oz) – sultanas
• 2 – Cinnamon sticks

Method:

  1. Peel the mango.
  2. Remove the stone and cut the flesh into large chunks.
  3. Place the mango chunks in a saucepan and add all the remaining ingredients. Stir well.
  4. Place over high heat and bring to a boil, then reduce heat and bring to a simmer. Simmer for 15 minutes. Let it cool.
