Ingredients:

• 2 tsp – cooking oil
• 1/2 tsp – coriander/dhania, roasted
• 5 – large dates, seeds removed
• 1 tsp – cumin seeds, roasted
• 1 tsp – Lime juice
• 3 – large, raw mangoes
• salt to taste
• 2 tsp – Sugar

Method:

  1. Pare the green mangoes and cut into small chunks.
  2. Heat about 2 tsp of oil in a pan and fry the chunks until mushy.
  3. Drain, mash well and set aside to cool.
  4. Blend the rest of the ingredients with the mango to prepare a smooth paste (do not add water).
  5. Adjust the salt if needed.
  6. Transfer to an airtight container and store in a refrigerator. Consume within a week.
