Ingredients:
• 2 – Cloves of garlic, crushed
• 3/4 tsp – grated fresh Ginger
• 1 kg – Chicken breasts, skinned, boneless and cubed
• 2.5 tsp – Ghee
• 2 – medium onions, finely chopped
• 3/4 tsp – coriander powder
• 3/4 tsp – cumin powder
• 1/2 tsp – Turmeric powder
• 1/4 tsp – Ginger powder
• 10 – dried figs, chopped
• 2 cups – Mango puree
• 1.5 cups – Cream
• 2.25 tbsp – Lemon juice
Method:
- In a bowl, rub the garlic and ginger into the chicken and leave to marinate for 2-3 hours.
- Barbeque or pan-fry chicken until tender.
- Cut into 1.5 inch pieces.
- Heat ghee in a large non-stick wok.
- Saute the onions, until light brown in colour.
- Add all the spices, saute for a minute until it releases its aroma.
- Add the chicken, figs, mango puree, cream and lime juice.
- Stir and cook for 8-10 minutes until mixture thickens slightly.
- Serve hot with steamed or sauteed vegetables or rice.
