
Ingredients:
• 5 – Fresh whole tender bhindi/okra
• 1 – Tomato, chopped
• 1 – Onion, chopped
• 1/2 tbsp – ginger, cut in thin slices
• Vinegar
Method:
- Cut the bhindi at both ends. Cook with a small amount of water until tender (about 6 minutes).
- Drain in a colander.
- Put them in a glass dish and pour over some vinegar.
- Marinate in refrigerator for 4 hours. Then drain.
- Arrange bhindi in a serving dish. Spread chopped tomato, onion and ginger.
- Put in microwave oven for 1 minute.
