Ingredients:
• Minced Meat or Chicken – 1/2 cup
• Mushrooms (finely chopped) – 1/2 cup
• Rice (cooked) – 1/2 cup
• Onion (chopped) – 1
• Tomato (chopped) – 1
• Ginger-garlic paste – 1 tsp
• Garam Masala – 1 tsp
• Chilli powder – 1/2 tsp
• Coriander (chopped) – 3 tbsp
• Bell peppers – 2
• Oil – 2 tbsp
• Shredded cheese – 1/2 cup
• Salt to taste
Method:
- Heat oil in a pan. Add onions and ginger-garlic paste. Fry till onions turn pink.
- Add minced meat to the pan and fry for 5 minutes on medium heat.
- Add tomatoes and chilli powder. Cook with a little water.
- Now add the mushrooms and rice and fry for 5 minutes, covered.
- Open the lid and add garam masala and coriander. Take off heat and keep aside.
- Chop bell peppers horizontally into two halves.
- Remove seeds and brush its cavity with oil.
- Stuff the halved capsicums with the mince. Top with cheese.
- Brush the exterior of the capsicums with oil.
- Pre-heat oven to 375 degrees F and bake for 20 to 25 minutes.
- Serve hot.
