Ingredients:
• 4 potatoes, boiled, peeled, chopped
• 1 cup – coconut, grated
• 1 tbsp – Tamarind pulp
• 1/2 tsp – Turmeric powder
• 4 Red Chillies
• 1 tbsp – Coriander seeds
• 2 Cloves
• 1 tsp – black gram (urad) dal
• 4 tbsp – oil
• 1/2 tsp – Mustard Seeds
• 5 Curry leaves
• Salt and Sugar to taste
Method:
- In one tsp oil, fry coriander seeds, cloves, urad dal and red chillies.
- Grind with coconut, tamarind and turmeric to a paste.
- Heat remaining oil.
- Add mustard seeds and curry leaves.
- When they pop, add potatoes and the paste.
- Add salt and sugar.
- Simmer once.
- Serve with rotis.
