
Ingredients:
• 4 – large potatoes, peeled and cubed (about 5 cups)
• 1/2 cup – part-skim milk, warm
• 1/4 cup – buttermilk
• 1 tbsp – butter, room temperature
• 3 to 4 – Garlic (less or more as per your taste)
• 3 to 4 tbsp – chives
• Salt and pepper to taste
Method:
- Place the chopped potatoes in cold water and bring it a boil – about 10 mins.
- Reduce heat and simmer for another 10 mins until soft. Drain and set aside.
- Meanwhile, remove the outer skin of the garlic and place in a little water and microwave for 5 mins until soft.
- Grind the softened garlic along with some buttermilk.
- Mix the butter with the milk until dissolved completely.
- Now add both milk and garlic-buttermilk to the potatoes and mash them. Season to taste.
- Mash them into creamy consistency or with lumps.
- Garnish with chives.
