
Ingredients:
• 1 kg – minced Meat
• 2 eggs, lightly beaten
• 2 Cloves – garlic, crushed
• 1 medium size onion, chopped
• 1.25 cup – stale breadcrumbs
• 2 tbsps – Coriander leaves
• 1.5 tsp – grated Lemon rind
• salt to taste
• oil for frying
• For Tomato and Onion Salsa:
• 5 – red ripe tomatoes, diced
• 1/2 – onion, finely chopped
• 1/2 cup – Basil leaves, chopped
• 1 Clove – garlic, finely minced
• A pinch of pepper
• 1 tbsp – fresh Lemon juice
• 2 tbsps – Olive oil
Method:
- For Tomato and Onion Salsa:
- Place all the ingredients in a bowl, and mix well.
- Leave mixture at room temperature for 25 mins. before serving.
- Combine all the ingredients in bowl, except oil.
- Divide into 14 equal portions.
- Roll each portion of the mixture into a ball, then flatten slightly and shallow fry the patties in hot oil until brown in colour and done.
- Serve with a salsa of your choice.
