Ingredients:
• 1 cup – Basmati Rice (or any long grain variety)
• 1 medium – Onion, (chopped)
• 6 Cloves – Garlic (Crushed)
• 1 pinch – Turmeric powder
• 1/4 Cup – Capsicum (finely chopped)
• 1 – Tomato (finely chopped)
• 1/2 cup – Mixed vegetables (finely chopped)
• 1 tsp – Chilli powder (or to taste)
• 1/4 tsp – Pepper powder (Optional)
• 1 tsp – Tomato Ketchup
• 1 tbsp – Oil
• Salt – to taste
Method:
- Soak rice for 15 minutes, drain, and set aside.
- Heat a pan, add washed rice, fry till it turns light brown in colour.
- Remove and cook rice in enough water. Let it cool.
- In a pan, heat oil, add onion and chopped vegetables.
- Fry till onion turns golden brown.
- Add tomato, turmeric powder, chilli powder, pepper powder and salt. Saute for few minutes.
- Add ketchup and mix the ingredients well.
- Add rice and mix well. Cook on medium heat for a few minutes.
- Serve hot.
