Ingredients:

• 1 cup – Basmati Rice (or any long grain variety)
• 1 medium – Onion, (chopped)
• 6 Cloves – Garlic (Crushed)
• 1 pinch – Turmeric powder
• 1/4 Cup – Capsicum (finely chopped)
• 1 – Tomato (finely chopped)
• 1/2 cup – Mixed vegetables (finely chopped)
• 1 tsp – Chilli powder (or to taste)
• 1/4 tsp – Pepper powder (Optional)
• 1 tsp – Tomato Ketchup
• 1 tbsp – Oil
• Salt – to taste

Method:

  1. Soak rice for 15 minutes, drain, and set aside.
  2. Heat a pan, add washed rice, fry till it turns light brown in colour.
  3. Remove and cook rice in enough water. Let it cool.
  4. In a pan, heat oil, add onion and chopped vegetables.
  5. Fry till onion turns golden brown.
  6. Add tomato, turmeric powder, chilli powder, pepper powder and salt. Saute for few minutes.
  7. Add ketchup and mix the ingredients well.
  8. Add rice and mix well. Cook on medium heat for a few minutes.
  9. Serve hot.
