Ingredients:
• 3/4 cup-flour
• 1/2 cup-sugar
• 1/4 cup-oil
• 2- Egg
• 1.5 tbsp- baking powder
• 1 tsp-vanilla essence
• 1.5 tbsp- cocoa powder
• 1/4 cup-warm water
• 1 pinch- salt
• 1/2 cup- Butter
• 1 cup -icing Sugar
• 2 tsp -strong coffee decoction
Method:
- Sift the dry Ingredients (maida and baking powder).
- Dissolve the cocoa in the warm water.
- Beat the egg and sugar until well blended and creamed.
- Add the oil, vanilla essence and warm water (mixed with cocoa powder) and mix well. Finally add the flour and fold into the egg mixture.
- Grease a cake tin and pour this batter into it.
- Microwave this cake for 5 mins on high.
- Cool it and decorate with coffee icing or any icing of your choice.
- Coffee icing:
- Cream together 1/2 cup of butter and 1 cup of icing sugar.
- Once well blended add 2 tsp of strong coffee decoction and beat again.
- You can either cut the cake into 2 and spread the mixture and sandwich the two pieces again or spread all over the cake.
