Ingredients:
• 250 g – plain flour
• 3 tsp – baking powder
• 3 tsp – castor Sugar
• 2 large eggs
• 175 ml – Milk
• 75 g – Butter (melted)
• 1/3 cup – mincemeat
• 12 hole muffin tin
• grated zest of 1 Orange
• salt to taste
Method:
- Preheat the oven to 200 degree C.
- Sift the flour and baking powder into a large bowl.
- Then stir in the sugar and half a teaspoon of salt.
- In a separate bowl, beat the eggs, zest and milk.
- Stir the melted butter into the milk mix, then pour this into the flour.
- Stir with a large metal spoon for a dozen or so strokes, then stop.
- The mixture will be lumpy and not all the flour stirred in.
- Spoon half of the cake mixture into the cases.
- Then add a heaped teaspoon of mincemeat to each.
- Then cover with the rest of the mixture.
- Bake for 25-30 minutes or until risen and golden.
- Leave to settle for a couple of minutes before removing them from the tin.
