Ingredients:

• 150 gms – Potato
• 1 medium size – Carrot
• 1 medium size – beet root
• 1/2 cup – green peas, cooked
• 1/2 cup – onion, minced
• 2 tbsp – Mint leaves, chopped
• 2 tbsp – coriander leaves, chopped
• 2 tsp – ginger-garlic paste
• 1 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Garam Masala powder
• 1 tsp – dry Mango powder
• salt to taste
• 2 tsp – oil

Method:

  1. Boil, peel and mash the potato.
  2. Peel and grate carrot and beet root.
  3. Heat the oil in a non-stick fry pan.
  4. Add onion, fry till light brown.
  5. Add ginger-garlic paste, fry till fragrant.
  6. Mix all the powders with 2 tbsp of oil and add to the pan. Cook stirring for 1 minute.
  7. Add carrot and beetroot. Sprinkle with 1/2 tsp of salt.
  8. Cover and cook till the vegetables are soft.
  9. Add mashed potato, green peas, and salt and mango powder. Mix well.
  10. Add mint and coriander leaves.
  11. Mix well and remove from fire.
