Ingredients:

• 2 litres – Milk
• 1/2 cup – Rice, washed and soaked for 30 minutes
• 1 cup – Sugar
• 1/4 tsp – Cardamom powder
• 10 to 15 strands – Saffron, crushed, soaked in 1 tsp warm Milk
• 10 – Almonds
• 10 – Unsalted Pistachios
• 1 – Peeled Apple
• 5 to 6 – Seedless Grapes cut into pieces
• 1 – Peeled Orange
• 6 to 7 – Dates soaked in water and cut into pieces

Method:

  1. Crush almonds and pistachios coarsely and keep aside.
  2. Boil rice in plenty of water till half done.
  3. Drain and spread on a plate, to cool the grains.
  4. Heat milk, bring to a boil.
  5. Add rice, stirring continuously till boiling resumes.
  6. Simmer, stirring occasionally, to keep rice from sticking to bottom.
  7. Allow rice to cook fully, but don’t let it get mushy.
  8. Add sugar, cardamom, saffron, almonds and pistachios.
  9. Stir, let it simmer for 2 minutes.
  10. Mix all the fruits. Cool it. Chill and serve.
