
Ingredients:
• 1.5 cups – Mixed Fruits
• 1/4 cup – Carrot (chopped)
• 1/4 cup – Beetroot (chopped)
• 1/2 cup – Oats (I used Quaker quick Oats)
• 3/4 cup – Fresh Coconut Milk
• 1/4 cup – Orange Juice
• 1 tbsp – Honey (You can add more)
• 1 tsp – Unsweetened Cocoa Powder
• 5 – Almond (Soaked till soft)
• Mixed Nuts For Garnishing
Method:
- Cook Carrot and Beetroot with enough water.
- Take all the ingredients including cooked carrot and beetroot in a blender.
- Blend till smooth.
- Freeze for 3 hours or till it freezes completely.
- Blend it once again till smooth.
- Again freeze it for another 1 hour. Then blend till smooth.
- Repeat step 6 for few more times.
- Before you serve, keep the frozen ice cream out for at least 15 minutes or till it get softened.
- Garnish with almonds, cashew or other nuts and fruits.
