Ingredients:
• 2 oz – vermicelli
• 4 – tender Cucumbers
• 125 g – chicken, boiled and shredded
• 2 – eggs
• salt to taste
• For the sauce:
• 2 tbsp – soya sauce
• 1 tsp – yellow mustard powder
• 3 tbsp – Vinegar
• 1 tsp – powdered Sugar
• 1 tbsp – sesame oil
Method:
- Blend all the sauce ingredients together.
- Boil vermicelli according to the directions on the box.
- Peel and cut the cucumber into thin slices.
- Beat eggs thoroughly, make into thin omelettes and shred them.
- Mix together eggs, chicken, and vermicelli, pour sauce over top and mix thoroughly and serve immediately.
