
Ingredients:
• 2 cups – basmati Rice
• 5 – Egg
• Small piece – Ginger
• 2 Cloves – Garlic
• 1/2 cup – Ghee
• 2 tsp – coriander powder
• 1/2 tsp – Garam Masala
• 1/2 tsp – Turmeric
• 1/2 tsp – chilli powder
• 1 chilli – finely chopped
• 1/2 cup – coriander leaves, chopped
• 1/2 cup – mixed vegetables (cauliflower, peas)
• 1 – small onion, finely chopped
• Salt to taste
• Cumin, Cloves – 1/2 tsp each
• Pepper to taste
• Lime juice – 1/2 tsp
Method:
- Cook the rice, with a spoon of butter and keep it aside
- In a pan fry ghee, seasonings, ginger, garlic and add onions. Fry till golden brown
- Add mixed vegetables, chopped chillies, coriander powder, turmeric, chilli powder and garam masala
- Beat the eggs and add the to the pan. Cook for about 2-3 mins on medium flame
- Add cooked rice, salt, pepper and mix the contents in the pan
- Cook for about 5 mins on a medium-low flame
- Add chopped coriander leaves after removing the pan from the stove
- Add 1/2 spoon lime juice
- Serve
