Ingredients:

• 2 cups – basmati Rice
• 5 – Egg
• Small piece – Ginger
• 2 Cloves – Garlic
• 1/2 cup – Ghee
• 2 tsp – coriander powder
• 1/2 tsp – Garam Masala
• 1/2 tsp – Turmeric
• 1/2 tsp – chilli powder
• 1 chilli – finely chopped
• 1/2 cup – coriander leaves, chopped
• 1/2 cup – mixed vegetables (cauliflower, peas)
• 1 – small onion, finely chopped
• Salt to taste
• Cumin, Cloves – 1/2 tsp each
• Pepper to taste
• Lime juice – 1/2 tsp

Method:

  1. Cook the rice, with a spoon of butter and keep it aside
  2. In a pan fry ghee, seasonings, ginger, garlic and add onions. Fry till golden brown
  3. Add mixed vegetables, chopped chillies, coriander powder, turmeric, chilli powder and garam masala
  4. Beat the eggs and add the to the pan. Cook for about 2-3 mins on medium flame
  5. Add cooked rice, salt, pepper and mix the contents in the pan
  6. Cook for about 5 mins on a medium-low flame
  7. Add chopped coriander leaves after removing the pan from the stove
  8. Add 1/2 spoon lime juice
  9. Serve
