
Ingredients:
• 2 – medium-sized radish, cut into 1 inch cubes
• 250 g – pumpkin, cut into 1 inch cubes
• 7 to 8 – small brinjals, cut into 1 inch cubes
• 2 cups – chopped Spinach
• 10 to 12 – small Prawns
• 2 – green chillies, slit lengthwise
• 1 – medium-sized onion, finely chopped
• 1 tbsp – panch phoron
• 1 tsp – Turmeric powder
• 1 tbsp – coriander powder
• Salt, as required
• Oil, as required
Method:
- Marinate the prawns with a pinch of salt and turmeric for some time and pan fry it.
- In a skillet, splutter panch phoron, chopped onions, green chillies and turmeric.
- Add prawns and fry with the spices.
- Add radish and cook for a minute.
- Add pumpkin and brinjal consecutively and cook until half-done.
- Lastly, add salt , coriander powder and spinach leaves and mix well.
- Serve hot with rice and dal.
