Ingredients:

• Potato – 2
• Green peas – handful
• Carrot – 2
• Beet root (small) – 1
• Onion (big) – 1
• Green chillies – 4
• Coconut Milk –
• Curry leaves – 5-10 leaves
• Garam Masala – 1 tsp
• Oil – 2 tsp
• Mustard Seeds – 1 tsp
• Cumin seeds – 1 tsp
• Salt – as per taste

Method:

  1. Cut the onion, potatoes, carrots, beet root, green chillies and keep it aside.
  2. In a pan, add oil, mustard seeds and cumin and let it crackle.
  3. Then add curry leaves and green chillies and saute for a minute.
  4. Add the chopped onion and saute till it becomes golden brown colour.
  5. Add all the cut vegetables and peas and saute for 2-3 minutes.
  6. Add water, cover the pan and let it cook.
  7. When the vegetables are cooked, add the garam masala and coconut milk and stir it well.
  8. Do not let the mixture boil after adding the coconut milk.
  9. Serve it hot with rotis or rice.
