
Ingredients:
• Potato – 2
• Green peas – handful
• Carrot – 2
• Beet root (small) – 1
• Onion (big) – 1
• Green chillies – 4
• Coconut Milk –
• Curry leaves – 5-10 leaves
• Garam Masala – 1 tsp
• Oil – 2 tsp
• Mustard Seeds – 1 tsp
• Cumin seeds – 1 tsp
• Salt – as per taste
Method:
- Cut the onion, potatoes, carrots, beet root, green chillies and keep it aside.
- In a pan, add oil, mustard seeds and cumin and let it crackle.
- Then add curry leaves and green chillies and saute for a minute.
- Add the chopped onion and saute till it becomes golden brown colour.
- Add all the cut vegetables and peas and saute for 2-3 minutes.
- Add water, cover the pan and let it cook.
- When the vegetables are cooked, add the garam masala and coconut milk and stir it well.
- Do not let the mixture boil after adding the coconut milk.
- Serve it hot with rotis or rice.
